It's been a while since I have posted a recipe, or anything for that matter, on my blog. I took a step back and a little break over the Christmas period to reset. It has done wonders for me and I'm feeling excited and inspired to get back into posting more regularly.
That being said, I have had a lot of time to play around in the kitchen and create new recipes for you! For whatever reason pancakes and waffles have always been a down fall and fail when I''ve tried to make them from scratch. BUT! The other night I thought it would be fun to have breakfast for dinner (who doesn't love breakfast for dinner? It's seriously the best) and I was ready to try out a simple recipe with whole food ingredients. These waffles are completely free from sugar, dairy and gluten. I am really passionate and believe that we should be nourishing our bodies with an abundance of whole foods (no one is perfect, myself included, but the majority of our diets should be made up of simple ingredients that our bodies are able to easily digest.
I have been trying out a tonne of different items from the good and gather range from target and I am so impressed with their minimal ingredient list on a lot of their foods. I picked up the gluten free flour blend which is made up of millet, rice, Sorghum, potato + tapioca starch and xanthan gum. As far as gluten free flours go, this ingredient list is amazing and it truly does resemble a plain flour.
I really love targets effort to try normalise minimal ingredient lists on packaged food and that they are doing their part to bring us back to basics. I n g r e d i e n t s :
2 cups of GF flour
1 Cup of almond milk
1/2 a teaspoon of baking powder
1 teaspoon of vanilla
A dash of pink himalayan salt
I used maple syrup and strawberries + raspberries to top but you can choose different toppings if you want them completely sugar free.
M e t h o d :
Preheat waffle iron
In a small bowl whisk together the eggs, milk and vanilla
In another bowl mix together the GF four, baking powder and salt
Make a well i the middle of the flour and pour in wet ingredients
Mix together until well combined
Once the waffle iron has heated, pour mixture on and allow the waffle to cook
Top with additional ingredients of your choice and serve
This recipe makes 6 waffles.
