Elderflower Paleo Shortbread.

Over the last 6 months I have slowly but surely transitioned into eating a paleo based diet. There is definitely going to be a blog post coming soon on why I have chosen to eat this way. But until then, I want to share the easiest, yummiest and most beautiful short bread recipe with you.


The paleo diet doesn’t allow any grains which has made it difficult to find biscuits or cookies that contain clean ingredients and leave you feeling satisfied. I’ve played around in my kitchen with this many times now to get the perfect shortbread consistency and taste. My recipe is made up of 5 simple ingredients and goes perfectly with coffee or tea. I’ve recently embarked on an exciting journey as a herbal student and love all things botanical, so I have added a special little twist to this recipe that adds a sweet + subtle touch.


This is my Elderflower Paleo Shortbread.


Recipe


  • 1/2 cup + 2 tablespoons of organic coconut flour

  • 1/3 cup of cold pressed organic coconut oil

  • 2 tablespoons of pure raw honey (You can use normal store bought honey but I find this adds better texture and depth of flavour to the mixture. Once you’ve had pure raw honey you won’t want to go back)

  • A dash of pink himalayan salt

  • 2-3 table spoons of dried elderflower. (I harvested and dried my own. I can almost guarantee you have some growing near you, it blooms in the summer time so stock up if you want to continue to make these delicious treats from fall through to spring) If you need help identifying elderflower, feel free to reach out and I’ll help you!

Method


  • Preheat oven to 350° F and 180° celsius

  • Line a tray with baking paper

  • Add coconut oil (ensure it’s a softened butter consistency), raw honey, elderflower and salt into a small bowl

  • With an electric beater, mix until you have a creamy consistency

  • Next add in the coconut flour and fold through with a spoon until a dough is formed.

  • Roll dough out until it’s about 1 cm thick

  • With a cooking cutter, cut desired shapes

  • Place on tray

  • Bake in the oven for 10 minutes

  • Allow shortbread to cool before placing in a container or consuming
