In my teen years I would always crave either chocolate bavarian or a lemon tart for dessert and every time I ate them I would feel sick, sluggish and gross! We all know these decadent desserts are full of refined sugars and other processed ingredients that do more harm than good to our bodies.

Fear not lemon tart lovers, I have a solution to curb and satisfy your citrus craving in a HEALTHY way! That’s right… Healthy! This recipe is full of healthy fats, natural sugars and guess what! You only need 4 ingredients to make them!

I’d like to introduce you to my new favourite snack, lemon bliss balls.


  • 1&1/2 cups of natural cashews

  • 100g of sultanas

  • Juice of 1 lemon

  • shredded coconut


Combine Cashews, sultanas and lemon juice in a blender, food processor or nutribullet, form into balls and roll in shredded coconut.

It’s that simple and trust me when I say the are WAY better than a lemon tart!
