Mini Paleo Cinnamon & Walnut Muffins.

There are a large number of pastries, muffins and cookies sold in stores and at local cafes or coffee shops that serve no nutritional benefit to your body in the slightest. My heart behind sharing recipes with you is to show you healthy alternatives are fun and super simple to make.

These mini paleo muffins were made up on the spot. I looked in my cupboard to see what I had and went with it. I know most people aren’t as go with the flow when it comes to baking and that’s totally fine, thats what I am here for!

Recipe makes 10!


Ingredients


  • 1 – 1/2 almond flour

  • 1 table spoon coco flour

  • 2 table spoons of cane sugar

  • 1 teaspoon of cinnamon

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon of vanilla extract

  • 2/3 of coco almond milk

  • 1 egg

  • 1/4 cup of chopped walnuts


Method


  1. Preheat oven to 375 farenhiet (180 celcius)

  2. Combine dry ingredients – Almond flour, coconut flour, cinnamon, cane sugar, baking powder and walnuts in a bowl

  3. Once combined add in your wet ingredients – Almond milk, vanilla extract and egg

  4. Mix together until the ingredients create a dough-like consistency

  5. Scoop a tablespoon of mixture into each baking cup

  6. Bake in the oven for 30 minutes

  7. Enjoy


These are super yummy when they are warm. Feel free to chop in half and add a little bit of coconut oil or nut butter of your choice.
