Paleo Chocolate Pecan Fudge Cakes.

Alright, this is hands down one of the most decadent, delicious and mouthwatering desserts I’ve ever eaten and best of all it’s gut-friendly, refined sugar free, gluten free, dairy free, paleo and Bethany friendly (if I can eat it without getting a tummy ache, you should be fine, lol).

I’m an 80/20 kinda girl and hate depriving myself of treats! Since I’m lactose intolerant and have an extremely sensitive stomach to a lot of foods, it’s hard having to miss out when everyone else is eating dessert around you — hence why I made this recipe. This way I get the best of both worlds, a happy belly and a chocolate treat!

Although I am making these specifically for the holiday season they are a great snack or after dinner treat to enjoy.

Let’s get cooking!!!

I n g r e d i e n t s 

  • 3 Eggs

  • 1/3 Almond flour

  • 2 tablespoons Cacao powder

  • 4 squares of 100% Chocolate

  • 2 table spoons of Ghee

  • 2 table spoons of Coco oil

  • 1 teaspoon Vanilla

  • 3 tablespoons Coco flour

  • 1 cup Coco sugar

  • 1/2 cup of chopped Pecans

  • 2 tablespoons of Coffee (brewed)

M e t h o d


  • Preheat oven to 325F

  • Combine eggs, coconut sugar, coffee and vanilla with an electric mixer. You want to beat for 5-7 minutes until well combined.

  • Add in almond flour, coconut flour and cacao powder

  • Allow mixture to set for a few minutes. The coconut flour is going to make it a little thicker.

  • Next you are going to melt the ghee, coconut oil and 100% dark chocolate

  • Once melted, add in with other ingredients

  • Next add in your chopped pecans

  • Stir/mix until well combined

  • Line a cupcake tray with cupcake liners

  • Add mixture evenly

  • Bake for 25-30 minutes

  • Once cooked, allow fudge cakes to cool and store in the fridge

  • Enjoy!!!

A little tip: They taste so much better once they have set in the fridge – it really gives it that yummy fudgey taste + texture.

Please do yourself a favour this Christmas and make these fudge cakes! They are so easy, made with beautiful ingredients and will definitely satisfy that sweet tooth without over inducing on refined sugars.
