Paleo Granola.

Over the past year I have experienced a wide range of struggles when it comes to my digestion & personal hormonal issues. I will delve a little deeper into both topics in different posts but for now I want to share with you this amazing Paleo granola I made up the other day. It’s easy to look at a Paleo diet and see how much you can’t consume anymore, but in my opinion it’s all about perception! There are still a tonne of amazing foods, whole foods might I add, that you can still consume and it allows you to get super creative with the meals + treats you make.

This recipe is simple, flavourful and HEALTHY! Most store bought granolas are filled to the brim with refined sugars and hydrogenated vegetable oils. Let me be the first to tell you both of these ingredients are SOOOOO bad for your body and for your health. If you can avoid them, do it at all costs.

I am a complete wing it girl when it comes to any sort of cooking or baking but I am totally aware of measurements I roughly use.


Recipe


1 cup of pecans 1 cup of walnuts 2 cups of unsweetened coco flakes 1/4 cup of raisins 4 table spoons (each) of pepitas, sunflower seeds and hemp seeds 1 table spoon of organic coco oil A frig tonne of cinnamon 🤤 A good drizzle of honey


Method

I cooked mine over the stove to begin with and then transferred to the oven. You will need to set your oven to 375 F and 180 C.


  • Simply add nuts, coco flakes and seeds in a pan over a medium heat until they begin to brown.

  • Add cinnamon + coco oil and stir through well.

  • Lastly add the honey and raisins.

  • Cook in oven for 20-25 minutes.

  • Allow granola to cool before transferring it into a glass jar and store in the pantry. It should last 7-10 days!


Granolas are such a great staple to have on hand and can be used in a variety of ways, such as: A smoothie bowl topper, mix with berries + coconut yoghurt or it is a great healthy snack alternative.

This particular granola is choc-a-block full of healthy fats from the nuts, seeds, coconut flakes, coconut oil and contains a little sweetness from the cinnamon, natural honey and raisins. This granola is calorie dense, so be aware of how much you are consuming each day. It’s extremely more-ish and has so many incredible health benefits from the ingredients I have used.
