I must admit, as we delve into the heart of winter my body craves these rich + warm meals — the ones that are good for the soul and fulllllll to the brim with nutrients!
Since living + leading more of a Paelo-based diet I have found many different ways to be creative in the kitchen. This shepherds pie was inspired by some pinterest recipes that I have tweaked to allow for those of us that struggle to digest specific foods.
This recipe made SO much, Gideon and I literally ate it for a whole week! It’s filled with delicious ingredients that will leave your body feeling wonderful.
I n g r e d i e n t s
1.5 pounds of beef mince (if you can, I suggest using grass-fed beef. Free of added hormones and you know that the animal had a beautiful life + was treated humanely)
3 medium sweet potatoes
10 brussel sprouts
1 can of organic tomato paste
1 cup of organic vegetable broth
5 cloves of garlic
2 tablespoons of ghee
1/4 cup of unsweetened almond milk
M e t h o d
Preheat oven to 375 F
Peel + cut sweet potatoes
Add them into a pan of boiling water (set on a medium – high heat)
While potatoes are boiling, start cooking your beef mince on a medium heat
As the meat is frying, cut up the rest of your veggies + herbs
Once meat is nearly all browned, add in the vegetables + herbs you just cut
Add in the tomato paste + stock
Stir and allow mixture to simmer
While the mix is simmering, drain water from boiling sweet potatoes
In the pan, add the ghee + almond milk
Add meat mixture into a large baking tray (You may need to drain out any excess liquid that didn’t simmer off)
Spread mashed sweet potatoes over the meat
Bake in the oven for 45 minutes
Allow to cool and enjoy!!
There you have it! This shepherds pie is a super easy, convent and extremely delicious meal to have in these cooler months!
