Raw Strawberry + Coconut Treats.

I’ve been focussing heavily on nourishing my body with whole foods. Firstly because I am getting all the incredible nutrients and secondly because our bodies were made to eat whole, unprocessed foods! People suffer from so many digestive issues and chronic illness’ because they are consuming food-like substances. Our bodies know how to digest whole foods, so I am being really intentional in what I choose to eat + bake with.

This recipe is full of nourishing ingredients that are going to serve your body well. Gideon’s response when he tried these for the first time was: “These are good, they don’t taste healthy at all”.


Ingredients:


BASE:


  • 1 cup of Walnuts

  • 1/3 cup of shredded coconut (unsweetened)

  • 1 teaspoon of vanilla essence

  • 1 tablespoon of pure raw honey

  • 1 tablespoon of cold pressed organic coconut oil

  • A pinch of pink himalayan salt


TOPPING:


  • 1-1/2 cups of frozen strawberries

  • 1/2 a cup of coconut cream

  • 1 tablespoon of pure raw honey

  • 1 teaspoon of lemon juice

  • 1 teaspoon of vanilla essence


Method:


*You will need a high speed blender or food processor for this recipe. I recommend a food processor for texture purposes.


  • Fill a cupcake tray with cupcake liners

  • Combine all the 'base' ingredients in a food processor. You might need to add a little bit of water to allow the mixture to stick together better. You are aiming for a little bit of crumble with the nuts but you want it to hold together

  • Press a table spoon of mixture into each cupcake liner and press down until all edges are filled

  • Place in freezer to set

  • While the base is setting you can get started on your topping. Add all 'topping' ingredients to washed food processor and combine. The consistency will be fluffy + creamy with a few little chunks of frozen strawberry throughout

  • Spoon topping over the base of your treats

  • Top with unsweetened coconut

  • Place in freezer to set

  • ENJOY!


These are perfect for an after dinner treat, a snack or you can take them to parties as a healthy alternative. They are full of healthy fats so they are going to keep you fuller for longer and strawberries have a low glycemic index, so you don’t need to worry about that quick blood sugar spike with these.
