I have been dabbling with the paleo diet for over a year now, I’ve been strict paleo, paleo based and not paleo at all. I find when I don’t consume dairy, grains, soy, sugar and limit my legumes is when my body feels it’s absolute best! I struggle with dysmenorrhea and that is ultimately the reason I have chosen to eliminate so many foods from my diet, because for me personally, they cause inflammation in my body. I know that others can consume these foods without a worry but in order for me to heal, this is something I have decided to do. I want to clarify that this doesn’t mean I don’t sometimes have some hot chips or a non-paleo treat. I have found so much freedom when it comes to the foods I consume. (a post is coming on this topic really soon).
This is where my creativity in the kitchen started to spark. I fell in love with creating all the foods I know and love, but made them healthy with whole, beautiful and clean ingredients! I’ll be honest though, bread was never a number #1 food for me, but recently I have been craving avocado toast like you wouldn’t believe! So, this is how my rosemary + garlic paleo seed loaf came about.
It’s extremely easy to bake and will definitely hit the spot if you too, can’t consume bread.
i n g r e d i e n t s⠀
1 cup almond meal ⠀
1/4 cup sunflower seeds ⠀
1/4 cup flax seeds⠀
1/4 cup chia seeds ⠀
2 tablespoons of black sesame seeds ⠀
3 tablespoons of coconut flour ⠀
2 eggs ⠀
Pink Himalayan Salt ⠀
1/2 teaspoon ACV ⠀
1 cup Water⠀

1. Preheat oven to 350F ⠀
2. Mix eggs + ACV in a small bowl⠀
3. Once wet ingredients are well combined, add in the dry ingredients ⠀
4. Mix together and add in water (I added 1/4 at a time) ⠀
5. When you have reached a wet dough consistency, pour bread mixture into a bread pan⠀
6. Cook for 40-45 minutes ⠀
7. I added sunflower seeds + pepita seeds on top of my loaf around the 20 minute mark (this step is optional) ⠀
8. With a skewer check if your bread is ready. If it comes out clean you’re good to go, if there is still some dough that comes out, leave your bread in a little longer ⠀
This bread is the perfect alternative for those that are gluten intolerant or sensitive to grains too! My garlic + rosemary paleo seed loaf is filled with beautiful healthy fats and is going to leave you feeling full without feeling bloated. It should last in the fridge for a couple of days!
