I feel like I am finally back into my normal routine and swing of things since Covid-19 hit the world. For a while there I had zero motivation to do anything, and while it’s great to take a break, 3+ months of feeling out of whack was definitely not how I envisioned 2020 to unravel.
I have been feeling SO inspired to create more healthy recipes for this community of mine and share some brands/companies I have been absolutely loving.
I recently came up with my very own take on a tahini cookie. Tahini is essentially ground up sesame seeds and is often used as one of the main ingredients in a healthier take on salad dressing or in homemade hummus. I feel like tahini is one of those foods that you need an acquired taste for because it can be a little on the bitter side. I wanted to get creative in the kitchen and pair it with some sweeter ingredients. That’s how these beautiful white choc chip + almond tahini cookies were made.
Tahini is a great source of healthy fats, calcium and is full of anti-inflammatory properties. I eat sesame seeds in the second half of my cycle to help build my hormones to prepare my body for menstruation. These cookies are so easy to make and are filled with beautiful, whole ingredients. I bet you’re asking, how can these contain white chocolate if they are paleo… I got you girl, or more like Navitas Organics has you.

Let’s get baking!
i n g r e d i e n t s :
3/4 cup of tahini
1/4 cup of coconut sugar
1/4 cup of Navitas cacao butter
1/4 cup of slivered almonds
2 teaspoons of vanilla extract
1/4 cup of unsweetened shredded coconut
A pinch of Himalayan pink salt
m e t h o d :
Preheat oven to 350 degrees F
Line tray with baking paper
Add all the ingredients into a small mixing bowl
With an electric hand mixer, mix ingredients together until well combined
Once ingredients are well combined, roll into small balls and line them on the baking tray
Bake in the oven for 10-15 minutes
Once cooked, allow cookies to cool
This is a super easy recipe and it’s filled to the brim with beautiful, whole ingredients.
A little PSA: These cookies are not super sweet so if you want to add a little more coconut sugar, feel free to do so.
This recipe makes 8 cookies.
My white chocolate almond tahini cookies are going to leave you feeling full from all the healthy fats, they are great for your skin and they are an incredibly healthy snack.
